Coastal Greek Salad
6 Large Gulf Shrimp, Grilled
3-1/2 Tablespoon Extra Virgin Olive Oil
1-1/2 Cloves Garlic Crushed
1/2 Teaspoon Dried Oregano
1/3 Teaspoon Sea Salt
1/3 Teaspoon Ground Black Pepper
3 Large Tomatoes cut into Wedges
1/3 Red Onion, cut into Rings
3/4 Cucumber, cut into 1/2 Moons
1/3 Green Pepper or Capsicum
5 oz Feta Cheese cut into small Cubes
18-20 Kalamata Olives
Shrimp:
Marinate 6 Gulf Shrimp in melted butter and oregano, grill and set aside.
Dressing:
Mix olive oil, lemon juice, garlic, salt, pepper and oregano thoroughly in bowl.
Salad:
Combine salad ingredients into a salad bowl and drizzle dressing over salad. Then lightly toss dressing and salad together. Add salt, pepper, and more dressing to taste. Serve on salad plate topped with Gulf Shrimp and garnished with avocado.
