Convection Oven
Convection ovens are perfect for roasting, cooking, rethermalizing (re-heating) and baking. Most convection ovens have a forced air convection system that provides air circulation and even heat distribution regardless of food placement or load; ensuring foods are cooked completely and evenly. When cooking other delicate baked goods in these convection ovens, the air flow can be adjusted to a milder and gentler flow ensuring proper cooking temperatures.
Rotisserie Oven
Rotisserie ovens are a type of roasting where the meat is generally rotated on a skewer which allows the meat to be cooked in its own juices. Another feature of rotisserie oven cooking is that continual & regular basting of the meat is made easy. The benefits of rotisserie oven roasting are that most of the fat is cooked off while the meat maintains its own juices. So, if you are looking for an oven that will evenly cook your meats without drying it out, then the rotisserie oven is the right oven for your venue.
Pizza Oven
So what does make a pizza oven, well, a pizza oven? It comes down to one thing, a stone. Pizza ovens are a mix of old world genius (the stone) and modern innovation. Pizza ovens are basically like other ovens except that the heat source heats the stone, usually a terra cotta stone that in turn gives the pizza the taste you expect. Salamander Oven / Cheesemelter
A salamander oven / Cheesemelter is at its most basic, an industrial strength broiler, usually located above the oven range itself. The salamander oven is best used for quick and efficient browning of foods, such as forming the sugar on a crème brulee. Salamander ovens / cheesemelters are recommended for venues that have a medium to heavy customer traffic.
Combination Oven
Combination ovens are perfect for steaming, baking, roasting, reheating and finishing. These ovens generally combine hot-air convection with a variable humidity control with temperature precision, because in high-volume venues, sometimes there is no room for error. A compact combination oven can lower labor cost, energy consumption, helps prevent meat shrinkage and cuts down on cooking time
Conveyor Oven
Conveyor ovens are ideal for high volume venues such as pizza restaurants. In a conveyor oven, a hot air surrounds the food as it is moved through the cooking cavity, which results in maximum heat transfer. The ‘cold boundary layer’ is removed as the hot air is forced under, over and all around the food. The heated air actually penetrates the food as it moves through the oven. Because of directed air-flow, the low & high points of the food are cooked evenly as it passes through the cooking zone. The conveyor oven also does a remarkable job in directing the heat where it should go, to the food, not the kitchen.
Microwave Oven
Microwave ovens are perfect for light-volume venues. Although each microwave oven is different, they all have easy to use touch controls for convenient & efficient service. Using a microwave oven in your break room, vending area, or kiosk can improve overall foodservice efficiency
Deck Oven
One of the best features of the deck oven is that each deck can usually be controlled individually using separate settings for each deck. This makes baking multiple items efficient. Having different oven temperatures and heat distribution make deck ovens the most versatile oven for any venue. If your restaurant has a menu with many different items with varying baking times, then a deck oven is a good option.
