It exhausts foul air, smoke, fumes, odor and grease laden vapors from range hoods and commercial cooking appliances. This air, if not ventilated, would continue circulating, creating an unpleasant environment. The continual operation of the kitchen exhaust fan makes for an optimal indoor environment.
