This hot food table is the Vollrath 38104. It measure 61 ¼ inches by 32 inches by 34 inches and requires a 120 volt, 30 amp dedicated breaker. This commercial hot food station is NSF approved and it is constructed from heavy gauge stainless steel. It has four food wells that will hold your food at temperatures above the HACCP “danger zone” of 140°F. The wells are self insulating, each have their own brass drain valve, and they will not rust or pit. Each well in this steam table has its own thermostatic heat control that adjusts for water temperature and food volume changes to reduce food waste. The dome heating elements use up to 25% less energy and there are capillary tube thermostats that control the power supply when maximum power efficiency is necessary. All the controls and even the power switch of this buffet bar have mechanical guards for extra safety, and the ten foot cord is bottom mounted to keep it out of the way.

This Vollrath electric steam table comes with a 8 inch wide, 3/8 inch thick polyethylene cutting board and a 7 ½ inch wide plate shelf. There is a wide, no-drip lip on the wells to keep the top surface dry and the elements have a non-stick surface to prevent scale build up and make cleaning extra easy. The elements in this buffet steam table are also cast-in for longer durability and the entire hot food table sits on stationary steel adjustable legs. Each of the four wells can hold full or fractional pans up to 6 inches deep, but we advise using up to 4 inch deep food pans.

It is a good idea to clean your electric steam table often to protect this long term investment. You can wipe off the stainless steel with a soft cloth and a non-chloride cleaner and the wells should be wiped out often to remove the water deposits. Also, food and liquid deposits should be cleaned off the buffet table bar to prevents food stains or the possibility of rust.
