Gas Convection Ovens - Electric Convection Ovens

Convection ovens heat air that is circulated in the oven by a fixed High-temperature fan. The movement of heated air past the food allows convection ovens to operate at a lower temperature and cook faster than a standard conventional oven. Convection air currents heat food with astounding proficiency. Restaurant convection ovens cook evenly due to the fact that the convection current eliminates "hot spots." Compared to a standard conventional oven, a convection oven has about a 25% to 30% reduction in cooking temperature and a 21% reduction in cooking time.
