Executive Chef Garth Thornton from Manny’s Steakhouse relies on five charbroilers to maintain their busy pace. "It's fast and furious around here," he said. "We serve well over 500 patrons on a busy night, and 85 percent choose one of our fabulous steaks…broilers are the mainstay of our kitchen. They're in continual heavy use from start to close each night."
Toastmaster’s TMDCL-48 is a gas lava rock charbroiler that is made of stainless steel on the front and top rail and aluminized steel on the rear and sides. It comes with four-inch adjustable legs and a one-year warranty on parts and labor. This restaurant broiler has four U shaped burners that use 140,000 BTUs per hour with natural gas and 120,000 BTUs per hour with propane gas. Each burner is controlled by an independent flame and one standing pilot services each burner. The area over the burners is covered by a stainless steel radiant and each burner has its own front panel mounted control knob. Included with this lava rock charbroiler are a ¾ inch rear gas connection and a full crumb tray. There is four reversible cast iron cooking grates that allow a ¼ inch or a 1/8 inch brand and the narrow grates have a drain channel to the grease drawer for easy clean up.
This Toastmaster broiler comes with one bag of lava rock for every 12 inch section. It requires the use of a commercial flex hose and even comes with a gas pressure regulator. There are no electrical requirements but this charbroiler must be located in a non-combustible place that is well ventilated. To stop your food from sticking to the cooking grates you can dip your food products in oil and preheat the grates before every use. It is important to clean the stainless steel with a soft cloth and a non-chloride cleaner and the grates should be cleaned after every use with a wire brush.
