Executive Chef Garth Thornton from Manny’s Steakhouse relies on five charbroilers to maintain their busy pace. "It's fast and furious around here," he said. "We serve well over 500 patrons on a busy night, and 85 percent choose one of our fabulous steaks…broilers are the mainstay of our kitchen. They're in continual heavy use from start to close each night."
The 6048-CBD is a Star brand gas lava rock charbroiler. It measures 48 inches in width, 25 ¾ inches in depth, and 15 ½ inches in height. This commercial broiler is constructed with a stainless steel front panel, a black polycarbonate trim and double walled aluminized steel side panels. Included with this charbroiler are four inch adjustable legs, a ¾ inch NPT rear gas connection, and a convertible pressure regulator. There are four H-style, cast iron burners and each burner has its own adjustable heat control valve. Every burner in this lava rock broiler also has two stainless steel radiants and a heavy-duty, cast iron cooking grates. All four grates can be individually positioned for the best heat control possible and they are reversible. One side is thin for searing and the other side is thicker for foods that are more delicate. For easy clean-up with your restaurant broiler there is a stainless steel water pan and a 2 ¾ inch, stainless steel, tapered splash guard to protect against spills and grease. To protect your hands against burns, the stainless steel bull nose front is cool to the touch.
Each burner in this commercial lava rock charbroiler uses 40,000 BTUs per hour with natural gas and 35,000 BTUs per hour with propane gas. It also utilizes a standing pilot ignition system and is NSF, CGA, and AGA certified. The natural lava rock briquettes used in this industrial broiler provide superior heat distribution and vaporize drippings. This lava rock broiler is backed by a one year warranty on parts and labor. To keep your gas lava rock broiler in its superior condition be sure to wipe down the stainless steel regularly with a non-chloride cleaner and a soft cloth. The cooking grates must be cleaned after every use as well with a stiff wire brush. To keep your food from sticking to your broiling grates you should preheat your grates before every use and dip your food products into seasoned oil.
