The Vulcan’s VCCB-25 is a restaurant gas charbroiler. It is intended for commercial use only and it requires a six inch clearance on both sides and an adequate ventilation system. This gas broiler is stainless steel on the front, sides, top-rim and grease trough and comes with a full width grease drawer. It also features four heavy, cast iron broiling grates and char-radiants. This commercial charbroiler is 25 ¼ inches in width, 27 ¼ inches in depth and 13 inches in height. It uses 58,000 BTU’s per hour and comes with a 5 ¼ inch reversible slope grate to help with fat run off and control flare ups. This broiler has an underburner baffling system that reflects heat upwards to create a “cool zone” under the burners. It uses a pilot ignition system and each burner has its own infinite heat control valve. There is a ¾ inch rear gas connection with a gas pressure regulator and four inch adjustable legs included with this industrial gas broiler at no extra charge.
This Vulcan charbroiler is NSF approved and CSA design certified. To get the most out of your gas broiler you should be sure that you are using the right grate for your menu selection. The grates should be seasoned before their first use by preheating them to open their pores and brushing them with oil. To reduce sticking when cooking with your radiant broiler, preheat the grates before cooking and dip the food product in seasoned oil. The grates should be positioned at an angle to help drain the grease and give better control over the distribution of heat. After each use the grates should be cleaned with a wire brush. Because this gas broiler is stainless steel, the outside should be wiped down regularly with a soft cloth and a non-chloride cleaner, and this will reduce the possibility of rust and pitting.
