The VG40 is a Vulcan-Hart gas braising pan which has a cooking surface of 39 inches by 23 inches. It has a holding capacity of 40 gallons, runs on natural or propane gas, and requires a 120 volt, 1 phase, 5 amp dedicated outlet. This tilting braising pan has a stainless steel front, sides, back, legs, and flanged feet. The front hinged, stainless steel pan body has coved interior corners and embossed gallon markings, and the stainless steel cooking surface is bonded to the steel plate. For easy operation, this countertop braising pan has a full width, 4 inch return flange with a formed pouring lip and a removable strainer. There is a stainless steel spring assist cover with a full width handle and a drop away food receiving pan support mounts under the pouring lip.
This Vulcan Hart gas braising pan has a manually operated pan tilting mechanism and a folding swing away handle. The pan can be fully tilted to empty with only 30 crank revolutions. There is one 30,000 BTU per hour burner in this tilting braising pan for each 12 inches of pan width, for a total of 120,000 BTUs per hour. The burners shut off when the pan is tilted 5° and they feature an electronic ignition system for automatic burner lighting. The controls on this countertop tilting braising pan are solid state temperature controls and they are water tight. Included with this braising pan is a ¾ inch rear gas connection and a gas pressure regulator. It is backed by a one year limited warranty on parts and labor and is UL and CSA certified. Be sure that you clean the stainless steel often with a soft cloth and a non-chloride cleaner to prevent the possibility of rust and pitting.
